The second attempt at the compulsory muffin challenge
“The challenge is to be faster, get the most out of myself and test how quick I can be.” It has been worth the effort in the case of Rachel Joyce, who so far has won the long-distance triathlon three times. But then she was faced with a new challenge: could she become a Muffin Master?
Her recipe for success: fast, practical and simple, based on the instructions. The muffins were then ready really quickly – almost at the speed of light, despite two attempts.
Your preferred Energize Muffin range: Caramel Vanilla (seems to be the favourite)
Your ingredients: Blueberries and flaked coconut (here we see the power of the Joycenator)
- Blend the Energize Muffin mix with water (as instructed).
- Now add the blueberries to the Muffin mixture. (tip from the pro: first divide the mixture between the muffin cases and then add the blueberries on top to stop them sinking too much.(That was the conclusion of the second attempt and freestyle programme ;-))
- Lastly, sprinkle over the flaked coconut (to give the muffins a lovely toasted coconut aroma) and pop the muffins in the oven.
Time and again we see: try out and test to get the best
result. Or as Rachel would say: “Never stop believing!”
